1 ounce pineapple gum syrup (such as Small Hand Foods)

1 ounce freshly squeezed lemon juice

2 dashes absinthe

Lemon peel, for garnish
Directions

Fill a cocktail shaker with ice. Add tequila, Cocchi Americano, pineapple gum syrup, and lemon juice. Shake vigorously and strain into a cocktail glass.

Top drink with 2 dashes absinthe. Garnish with a lemon twist.
