2 ounces Banks 5 Island Rum

1 ounce simple syrup

1 ounce fresh lime juice

1 dash Angostura bitters

5 to 7 mint leaves plus 1 large sprig for garnish

8 oz soda water

crushed ice
Directions

Combine rum, simple syrup, lime juice, bitters, and mint leaves in a cocktail shaker and fill with ice. Shake vigorously for 15 seconds.

Add 1 ounce soda water. Strain through a fine mesh tea strainer into a highball filled with crushed ice. Top up with more soda water and garnish with mint sprig. Serve.
